Absolutely Simple Honey Garlic Roasted Chicken

For real. Whole chickens are the best ever. They’re so cheap. Why did no one ever tell me how cheap a whole chicken is?!  And it will last for many meals!  AND THEY ARE SO EASY!!  This one literally has 4 ingredients.  5 if you count salt and pepper, baha!

Not to mention that it is delicious.  My mother in law kinda freaked out when she tasted it!  So…I will share it with you!  Here we go!

 

So, here’s what you need:

  • 1 Whole Chicken
  • 6 Tbsp Grass Fed Butter, Melted
  • 3-4 T Raw Honey, Melted
  • 4 Cloves Garlic, Minced
  • Salt and Pepper to taste

 

And here’s how you do it:

  1. Preheat oven to 425*
  2. Rinse your chicken and make sure there are no goodies in the cavity.  Pat dry.
  3. Salt and pepper your chicken generously.
  4. Mix together butter, honey, and garlic.
  5. Baste/pour butter sauce all over (and in) the chicken.
  6. Put in your oven and roast for about an hour and a half…it will depend on the size of your chicken!  Keep an eye on it because honey does burn…but you do want a little bit of darkness!  Just not a burn taste.  🙂

 

And BAM!  You’re done!  Easy peasy!!

Beans and Franks!

How can this be possible, you ask? I am a health food blogger after all…so how can I be blogging about beans and franks?!

Well, I have some very exciting news!  Mr. Rodgers and I were browsing the aisles in one of our favorite grocery stores, and for some reason (DESTINY!), we found ourselves looking through the cooler of hot dogs and bacon and such things.  Absently, he reached up and grabbed a pack of hot dogs and started scanning the label.  Lo and behold…it was Applegate, my favorite bacon brand!  We got even more excited when we realized these were not only all beef hot dogs…but they were GRASS FED!!  With no nitrites!!  Isn’t that the best news anyone has ever heard?!  I can tell you…summer barbecues are now easier because we know we can just grab a pack of those and still be able to eat with our friends!!

But here is another super easy, super satisfying idea I wanted to share with you!  Great for when you want something packed with protein that still has the feel of comfort food!  Beans and franks!

 

So, here’s what you need:

  • 2 Applegate Grass Fed Hot Dogs
  • 1/2 Small Onion
  • 1 Clove Garlic
  • 1-2 Tbsp Grass Fed Butter
  • 1/2 Can Pinto Beans
  • Red Pepper Flakes to taste

 

And here’s how you do it!

  1. Heat up a grill pan and slap your hot dogs down on there.  Alternately, you can cook them in a normal pan, I just wanted the dish to have that “grill” feel.
  2. Melt butter in a small pan.  Add onion and cook for about 5 minutes, until starting to get tender.  Add garlic, stir, cooking an additional minute or so.
  3. Add beans and stir in.
  4. Slice hot dogs into slices and stir in with beans and sprinkle with red pepper flakes, cooking everything for a minute or so.  Just long enough for everything to be warm, and those flavors to be infused with each other. 🙂
  5. Dump into a bowl, and devour!!  So incredibly comforting!

Simple Fast Burgers (With Paleo BBQ Sauce)

Yay for simple! Yay for fast! Yay for burgers! Yay for BBQ!! Yay for health!!!

You can’t get much better than that!  I mean, lets just be honest…some times you just need a burger, even if you are being healthy.  Now, I have some really great recipes in my archives for amazing burgers that will rock your world!  (Jalapeno Cheddar Chicken Burgers and Turkey Feta Burgers to name a few!) But some days you just don’t have time to prepare a fancy burger…you just need a simple, sweet, “I have to leave soon/I’m just plain tired” burgers.  So….here you go!!

A few days ago, I gave you a recipe for an easy, clean BBQ Sauce recipe that goes great with this burger.  However, you can dress it however you feel fit.  🙂  Mustard is always a good option, there is usually nothing naughty in it.  Just mustard seeds and vinegar.

 

So, here’s what you need:

  • 1 lb Beef (preferably grass fed!)
  • 1/4 C Flax Meal (Works great for a bread crumb substitute!)
  • 2 Cloves Garlic, Minced
  • Salt and Pepper

And here is how you do it:

  1. Combine all ingredients in a bowl.
  2. Form into two patties, with a small indentation in the middle.
  3. Preheat a grill or grill pan to medium heat.  Place burgers on the grill, and baste with paleo BBQ sauce.  Cook 6-7 minutes (or longer depending on how well done you like your burgers).  Flip, and repeat!

Combine all your ingredients in a bowl.

Preheat your grill or grill pan.  I smeared mine with a little butter.  Cause I love butter.

Cook about 6-7 minutes and flip…

Baste again…cook until desired degree of done-ness…

And BAM!! A big, beefy, protein-y, delicious, filling, paleo, clean, simple, easy BURGER!  BAM!
